Baking Sunday #2

 Chocolate and Nut Chewy Cookies
soo i've been baking again, i honestly don't get as much time to do this as i'd like but i've just had a week off work I thought i should do something productive.  Today i was thinking i could really eat some chewy gooey cookies. So heres what i came up with!


I followed a basic and easy recipe to make these but made a few adjustments to make them my own, honestly i think they could have come out better and with the recipe i used they were never going to be normal cookies but instead crispy with a chewy inside.
I have a little.. helper who doesn't leave the kitchen when there is food present, but insists on sitting and hopelessly waiting for something to drop. It didn't happen on this occasion. I have typed the recipe below, after making adjustments this should work - the actual recpie just turned out sloppy and the cookies just didn't cook right. 
You can make these cookies all in one bowl and they taste a little on the lighter side than the doughy type.

Ingredients
Butter & parchment paper to line a baking tray
4 medium egg whites
350g icing sugar
75g coco powder
3tbsp plain flour 
125g chopped nuts
100g chocolate chips

Method
1. Preheat oven to 180c, whisk egg whites with a beater until very frothy
2. Add sugar, coco powder and flour and whisk until all blended
3. Add a tablespoon of water and whisk on full speed until the mixture becomes very thick
4. Place tablespoons of the mixture on the baking tray, be aware to leave plenty of space for the cookies to expand, they take around 12 minutes to cook, they will be firm and cracked. Transfer to a wire rack to cool.

If you have any suggestions for me to bake something let me know, i've spent 3 years learning professional cookery and i still can't say i'm a very good cook at all but at  least i enjoy the taking part and making a mess.
