Halloween Choc & Orange Cupcakes


Happy Halloween! 

I had a Sunday off work, its pretty miserable outside so i made these yummy cupcakes, there chocolate with a gooey chocolate filling and topped with a orange butter cream.



The colour of the buttercream wasn't quite what i hoped, its a little more peach than orange, however it tastes pretty good, i also wanted to get my hands on some plastic spiders to put on top of each one.. didn't manage to find any of those and it looks like greggs the bakers have got that idea anyway!

I made a chocolate sponge mix, added a spoonful to each case and the squished in a chocolate lindor truffle! topped with a little more mixture then baked.





When cooled, i made a buttercream with orange zest, squeeze of orange juice and a bit of colouring

If you'd like to have a go at these, heres what i used;
It made around 12.

For the cake:
6oz Self Raising flour
3 Eggs
6oz Caster Sugar
6oz Butter/ or margarine
3 Heaped spoonfuls of chocolate powder
12 Lindor Chocolate Truffles

Turn on the oven to 200c. In a bowl mix the sugar, flour, butter and eggs. I beat mine up with a electric hand whisk, when together i added the chocolate.  Get your cupcake cases ready on your baking tray.
I added a spoonful to each case, i then added the chocolate truffle to the centre of each one, then added a little more cake mixture on top to cover it. Bake the cupcakes for around 15 min.

Now for the buttercream topping, i don't have the scientific measurements! I generally just keep adding whats needed until it looks right! Generally you need alot more icing sugar than butter. So if you start buy adding a few big spoonfuls of butter, pour in your icing sugar and keep whisking until it looks right! I grated in some orange zest, then i squeezed the orange juice aswell which orange food colouring. I apologise for the rough recipe!

When you cakes are cooled you can pipe your frosting on top, add some kind of halloween decoration on top and there good to eat!
