The good not so good breakfast..

So i decieded to make an alternative breakfast option

Banana Breakfast Muffins!

Now, if you ignore the sugar and fat content they are packed of oats, bananas, dried fruit and nuts. So its a nice treat.

These are really simple to make, its just a case of combining everything in a bowl. I made these muffin cases by cutting squares of greaseproof paper, its kind of a rustic look.. i know you can actually purchase this muffin cases though.
Heres the recipie i used to make them here, They were really tasty and they didn't last too long when i took mine into work.

Even if your not taking part this year, theres no reason why you can't self indulge a little right?

So i made this oatmeal biscuits for my boyfriend (and well a few for me).

Really simple to make! Pre-heat the oven to 180c and grease some baking trays

You will then need

150g Self Raising flour

150g Oats

Pinch of Salt

75g Caster Sugar

75g Margarine

Some milk to mix

Combine all the dry ingredients in a bowl then rub in the margarine, then add milk bit by bit until you get a stiff dough.

Then roll out thinly and cut out your shapes.

Place on a baking tray and cook for 15 mins.

When cooled you can decorate them how you wish, i just used simple icing sugar and sugar decorations.

Easy Freezer Biscuits

I made these biscuits today to keep in my freezer with the idea to just bake some off whenever i feel like it! They are really easy to make and just have the added connivence of being able to bake some off in minutes, nice to impress people by thinking you've been baking!

These biscuits are based on mainly oates which kind of make me thinks there a little better for you.... kind of..

I based by biscuits on this recipie here but then i altered it to my own taste. You can basically add anything you fancy into the mix such as nuts, apricots and raisins I added some big spoonfuls of white chocolate powder with white chocolate chips. yummy. I also think adding orange juice and grated peel. Alternatively i think maple or golden syrup would also go down a treat...

Baking Sunday #2

Chocolate and Nut Chewy Cookies

soo i've been baking again, i honestly don't get as much time to do this as i'd like but i've just had a week off work I thought i should do something productive. Today i was thinking i could really eat some chewy gooey cookies. So heres what i came up with!

I followed a basic and easy recipe to make these but made a few adjustments to make them my own, honestly i think they could have come out better and with the recipe i used they were never going to be normal cookies but instead crispy with a chewy inside.

I have a little.. helper who doesn't leave the kitchen when there is food present, but insists on sitting and hopelessly waiting for something to drop. It didn't happen on this occasion. I have typed the recipe below, after making adjustments this should work - the actual recpie just turned out sloppy and the cookies just didn't cook right.

You can make these cookies all in one bowl and they taste a little on the lighter side than the doughy type.

Ingredients

Butter & parchment paper to line a baking tray

4 medium egg whites

350g icing sugar

75g coco powder

3tbsp plain flour

125g chopped nuts

100g chocolate chips

Method

1. Preheat oven to 180c, whisk egg whites with a beater until very frothy

2. Add sugar, coco powder and flour and whisk until all blended

3. Add a tablespoon of water and whisk on full speed until the mixture becomes very thick

4. Place tablespoons of the mixture on the baking tray, be aware to leave plenty of space for the cookies to expand, they take around 12 minutes to cook, they will be firm and cracked. Transfer to a wire rack to cool.

If you have any suggestions for me to bake something let me know, i've spent 3 years learning professional cookery and i still can't say i'm a very good cook at all but at least i enjoy the taking part and making a mess.

Today i have mostly been baking!

The house is always full of a sweet cupcake smell, these were made for a wedding order, not by me but i did make these yummy cheesey scones

Recently i took a trip to the Yorkshire Dales where i visited the Wensleydale Creamery, i was bad and bought a chunk of cheese.. so i decided to bake these. now i 'm a big fan of sweet scones with some clotted cream and jam, so i took a savory alternative.

Wensleydale & Chive Scones

What you need

225g Self-raising flour, sifted

55g Butter, softened

pinch of salt

50g grated Wensleydale

finely chopped fresh chives

150ml Milk

Method

1. Preheat the oven to 220C

2. Combine the flour, salt and butter in a bowl

3. Stir in the grated cheese and chives

4. Make a well in the middle and add milk bit by bit ( you may not need to use it all ) then mix the mixture to a dough.

5. Knead the dough on a floured work surface then roll out until around 2cm in thickness. I used a round cookie cutter to cut out the scones

6. Place them on a greased baking tray, then use any remaining milk by brushing it on the top of the scones.

7. Bake for around 12 - 15 minutes or until they rise and are golden, then cool on a wire rack.
